Have you frozen eggs? (not what you think)

This is my first post in the food arena, and I promise you; this isn’t a recipe blog.  If you are looking for those pretty, organized blogs with step by step instructions; you will not find it here.  I’ve tried that route years ago, and I am not disciplined enough for that!  Usually, I look at a few recipes, analyze the ingredients, and go rogue with my own version of several recipes.  Sometimes they are great and sometimes; not so much, but I digress.  

Have you heard of freezing eggs, no, not for fertility reasons. Eggs, like chicken eggs for breakfast?  I think I have, but recently I read about it and experimented.  I was skeptical, but found eggs on sale, and let’s face it, these days that is really unusual so I decided to take a chance.  I cracked the eggs, whisked them, and put them in containers with 2-4 eggs per container.  

Tonight, while cooking a casserole (not following a recipe), I took a container out, skeptical as to what the results would be.  The frozen eggs looked “okay” (pictured above), but, oh boy, when they were thawed out, they looked like a bad experiment, or worse yet; like something that I used to see in the hospital setting with biopsy exams. Now, if you are in the medical field, you are used to comparing food with real life anatomy (many of my friends can relate). My husband, and his late friend would do this to us all the time. Just as we were all ready to eat a piece of meat, they would share exactly where that part came from on the animal. I am digressing, again, so getting back to the eggs…..

I continued with my heated skillet and a little melted butter over medium heat.  The results were pleasing!  It looks, and tastes like I cracked the eggs right out of the carton.  I added some cheese and Voila!  You can see the results next to my chicken casserole I had in the oven while I was experimenting.  I think this is a great idea to do if you find a really great price on eggs. I haven’t tried them in a baking recipe yet, so if you do, please let me (and our readers) know.
